A fridge breaks down, the technician quotes a repair, and you are left with the question every F&B owner faces sooner or later: fix it, or replace it?
Since 1985, kitchens have called Alan when the cold fails. Forty years of repairs taught Alan which machines hardly ever call him back, and which ones keep calling. The signs below are the ones that turn up in the repair notes again and again in the months before a unit gives out for good.
The third sign is the one to take most seriously, because it is not a money question. The US FDA and USDA put the danger zone at roughly 4°C to 60°C, and in that band bacteria can double in about 20 minutes. A fridge that drifts into that range between services is not a fridge with a fault. It is a food safety problem with a compressor attached, and every plate that comes out of it carries your name.
The danger is spending good money in small amounts, a part here, a callout there, on a unit that is going to fail again anyway. Each quote on its own looks reasonable. Added up over a year, they can come to a large share of what a new unit would have cost, and you still own the old one.
In forty years of repairs we have seen the same run of events often enough to name it. A gasket one month. A fan motor a few months later. Then a callout because the unit is warm again, and this time it is the compressor. Nobody decided to spend that much on an old fridge. It happened one small decision at a time.
A rough rule: if a repair costs more than about half the price of a new unit, replacing is usually the smarter spend. Before you apply it, add two things to the repair side of the sum that the quote leaves out. The downtime, because a fridge waiting on a part is not holding your stock. And the stock itself, because if your fridge died on a Friday night during dinner service, what would that cost you? The quote is for the part. The risk is yours.
Not every fault is a replace signal. The honest split, from the repair notes:
Ask the technician which column the fault sits in. A straight answer to that question is worth more than the quote itself. We will tell you which one you are looking at, even when the answer is that the old unit has another good year in it.
A new fridge is not just “not broken”. A modern inverter unit uses far less electricity than a tired old one, so it starts saving from day one, and it holds a flatter temperature through the rush, which is what protects your food. Then there is the grant. Many of the models we carry are on the official pre-approved list for the Energy Efficiency Grant. Base Tier support is up to 70% of the cost for SMEs, capped at S$30,000 per company. The application goes through the Business Grants Portal, and it must be in before you buy. Once approved, you have up to one year to purchase, install and claim. We supply pre-approved equipment; we do not administer the grant or guarantee approval. A new unit also comes with a warranty. Commercial warranty terms apply, ask us for details. The cheapest fridge on day one is rarely the cheapest fridge by year ten, and a unit that keeps calling the technician is proving it.

One repair is normal. A second or third in a year is the unit telling you it is done. Past that point each repair buys less time than the last.
Small fixes on a sound cabinet, a gasket or a fan motor, are still worth it. A compressor or spreading rust on a unit past about ten years usually is not, because parts get harder to find and the next failure is already on its way.
